Speaking of food. Who likes a good Oklahoma wheat harvest report!? Boy do I have the Twitter account for you to follow. In other words, the Oklahoma Wheat Commission joined Twitter today and needs followers. Do it.

My biggest gripe is their is no traceable standard of identity to put it on the label. I could go grind a damn goat and call it wagyu if I wanted.
Waygu is the new Angus.....everything was Angus or Certified Angus (which they admitted was just a brand)......I did some quick math and if they were slaughtering Registered Angus cattle and the McDonald's Angus product was 5% of their sales they would wiped out the American herd of Red and Black Registered Angus in weeks. There will always be a non trademarked ambiguous term to sucker people into thinking they are getting higher quality. My personal favorite is Waygu hot dogs......just get the "meat" ones made of pig lips and buttholes they taste better and have more honesty.

Angus in a restaurant means that the animal was part angus, not a registered angus. I’ve been to a lot of Angus bull auctions and the cheapest ones sell over $4000-$5000 with the more expensive commercial ones even though they’re registered are bringing over $10,000 for one animal, but that’s for a breeding bull.

Angus when listed as only Angus doesn't have to mean shit. Certified Angus the brand admits it itself. They aren't tracking genetic make up of cross bred cattle at slaughter houses and splitting them based on degree of blood. Could they really be monitoring it at your local steak house......maybe....and that Angus cross animal it's coming from could grade lower than others so it doesn't matter anyway an animal doesn't meet Prime standards for being 1/16th Angus.....but at the McDonald's level they are just buying meat from some factory slaughterhouse that's branding it. It's like how when you look at shelter dogs they change to the breed de jour of what is popular. Shelter dog over 30 pounds looks like a coyote raped a cat.....Lab mix.....little shelter dog that looks like a guinea pig got to close to radiation poodle mix. People like poodles and labs....people that don't know about cattle think Angus is THE superior breed and Angus cattle can be some of the best beef.....other breeds can grade out just as well it's how they are raised and finished that matters.

If you want to split hairs if it's a black cross bred in America it probably has some Angus.....so maybe you could say we only kill black cattle and be safe but again it means nothing to quality of what you are getting. The defined rating category is what matters. But calling it Angus is a good way to switch from Prime to Choice and charge a premium for a lessor product.

the biggest thing CAB has done has increased genetics within angus overall.

I have usda grading in my small plant, and rib and check quality after every kill.

You can usually tell pretty quick which ones are going to grade by looking at them and disposition.

The Wagyu thing, go to your local wal mart, pick up a “Wagyu” burger pack and check the establishment number. Most likely Oregon or Philadelphia. Import establishments bringing “Wagyu” from Australia. That’s my gripe.
 
I’ve looked in to some of those cabinets and the cost is just to much for how much I would use it. And you are completely correct on Wagyu. I had A5 in Hawaii and it was amazing. And I have bought some from here that are greatly marbled but most(by most I mean like 95%) you will will find is barley prime. And if you talk with the certain producers they will try and tell you that the cross with angus makes it better. They are wrong. I have a year old heifer that we had to bottle feed last year. She is up by our house with our Highland. I think we are going to find an embryo and get a full blood Wagyu. Still haven’t decided if we want to have it sexed and get a female to be able to AI in the future or go for a bull and have a nice freezer full of home raised Wagyu to eat for a year or more.
Why not get a few sexed full wagyu embryo, implant them and you would have two full blood wagyu if that’s what you’re into. I’ve had the “Texas” wagyu experience and I wasn’t impressed. I will stick with a British breed

Best cross I’ve seen in the last year for bang for buck was Wagyu bull ok charolais heifer.

You get the muscling of a charolais with marbling of Wagyu pumping out prime carcasses. That’s a sweet spot.

My God that had to be a confused animal. The American Royal carcass contest that last few years has been a Wagyu crossed with limousine or Charolais.
